What is ceviche and how to prepare it

Well one of SATO Travels favourite dishes when we go out for a meal has to be the amazing collection of ceviche that is on offer in Peru. So what is ceviche?, ceviche is a seafood dish which is very popular in the coastal regions of South America especially Peru.

Ceviche is made generally from fresh raw fish which is marinated in a citrus juice normally lime in South America and often lemons in Europe. It is then spiced with chilli peppers that are native to the region. Ceviche often has other seasonings such as onion, salt and coriander. Ceviche is often accompanied by side dishes such as sweet potato, lettuce and corn. The main thing to rememeber is that you always need to use the freshest fish possible to avoid food poisoning.
